Brainstorming......


I am needing your help! I feel like I feed Brentley the same ole stuff each week. It's so hard to come up with good healthy recipes that contain no egg. I have been trying to incorporate the veggies, meat, and some type of carb together to make her meals. It doesn't always work out that way though. Any suggestions? Keep in mind, all of the ingredients can't have egg or even be processed in the same facility that other products that contain egg are processed. I have tested her on the "Processed in facility that contains egg products and could contain traces of egg."
She failed.

Also, with all of the birthday gatherings we went to this month I felt really sad that Brentley wanted EVERYONE'S cake. I took her a "special treat" cookie dough sundae (by Weight Watchers) but she wanted no part of it. I ran into a mother of a little boy in her class on Monday and she said she was bringing the kids cupcakes to school the next day. She knew Brentley couldn't have one so I told her no big deal I will send her a "special snack". I went home and googled "cupcakes without egg" and found some unique ways to make cupcakes. I went with the soda cupcake. All it was is 1 box of cake mix, 1 stick of butter, water, and instead of egg use any type of soda. All I had was a butter cake mix so I used a Diet Sierra Mist. I was so anxious to see how they would turn out. They looked really good in the oven but as soon as they cooled off they were so flat (kinda like a mini muffin). Oh well, they tasted really good and moist. I froze the rest, so next "party" I'll take one out and ice it.

i don't know anything off the top of my head..but when i worked at harding we had several kids who were allergic to eggs..there parents used vegan recipes a lot..many of there recipes call for no eggs..hopefully that will help some

Good idea for the soda cupcake! Poor B! I am obsessed with the Hungry Girl stuff right now. Have you tried that?
